Eggplant is a vegetable that has earned a place in the kitchens of the Mediterranean and the Middle East, where more than one dish includes it in a very prominent plane. Medium difficulty Ingredients:
  • 3 eggplants
  • Olive oil
  • 1 onion
  • 2 cloves of garlic
  • 4 ripe tomatoes
  • 400 g of smoked tofu
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Sea salt

We cut the eggplants in thin slices and fry them in hot olive oil. When they are fried we drain them on absorbent paper.

Peel the onion and garlic cloves and cut them into very small pieces and sauté them in a pan with two tablespoons of olive oil.

Grate the tomatoes and add them. We crumble the tofu and add it to the pan along with oregano, cumin and sea salt.

Cook this sauce over medium-low heat for 10-15 minutes. While we are preheating the oven.

In a rectangular mold of 20 x 10 cm. approximately we cover the floor with the slices of eggplant and also the sides of the mold, so that they stand out.

We put a little tofu in sauce, cover with slices of eggplant and so we alternate until finished.

We close with the protruding eggplant slices and bake at 200º C for 15 minutes. Unmold, let warm and serve.
